by How Jen Does It8 cups vegetable broth
2 cups green lentils
4 medium carrots
1 medium onion
3 cloves garlic
3 stalks celery
1 bay leaf
2 teaspoons thyme
Salt and pepper.
Using a food processor, finely chop carrots, onion, garlic, and celery. Add all ingredients to slow cooker. Cook on high for 4 hours. Taste and adjust seasoning, if needed.
